DECEMBER RECIPE

 

Winter's chill is upon us!  It's time for a rich and spicy chili! - Editors.

Meaty Chili with Black Beans, Crimini Mushrooms and Green Beans!

(Serves 8-10 people)
Evelyn Rysdyk

Ingredients List:
• 1 Large Onion--chopped fine (white or yellow onion)
• 3 Cloves of Garlic--chopped fine (you can substitute 1 large clove of elephant garlic)
• 2 lbs. of Ground Pork, or Beef or Turkey or Lamb
• 2 Tablespoons of Ground Cumin
• 2 Tablespoons Ground Coriander Seed
• 1½ Teaspoon of Sea Salt (Use a grey sea salt with lot's of minerals.)
• 1 Tablespoon Chili Powder
• 2 Tablespoons dried Chipolte Chili Powder
• 32 oz. of Organic Broth
• 2--5oz. packages (10 ozs. total) of Dried Crimini Mushrooms --crushed in their packages to "rough chop"
• 1 Package of frozen cut green beans
• 1-28 oz can diced tomato 
• 1 Can of tomato paste
• 2--25 oz. cans (50 ozs. total) of Black Beans
• ¼ cup of Olive Oil

Optional garnish:
• Shredded cheddar cheese, or sour cream or chopped green onion.

Cooking Equipment:
• A large cast iron stew pot (I use an enameled cast iron.)
• Wooden spoon and ladle  
• Sharp knife and board for chopping
• Measuring cups and 
• Measuring spoons
• Can opener!

Preparation Instructions:  (Total time from start to table -- little over an hour and half)
• Saute Onion and Garlic until translucent in the olive oil in the pot over medium heat (Keep stirring with wooden spoon to keep from sticking or burning)
• Add meat--cook thoroughly especially if you are using pork!
• Add seasonings, broth and mushrooms and frozen green beans--cook for about 20 minutes
• Add tomatoes and tomato paste--cook for additional 15 minutes
• Add cans of beans--cook for final 5 minutes

Serving Suggestions:
Garnish with the shredded cheddar cheese, or sour cream or chopped green onion.  Serve with brown rice or corn bread!
