Nothing says it's Summer like fresh watermelon!  This is a bright new way to use watermelon that's a twist on a favorite snack--salsa and chips.

Watermelon Salsa

You'll need:

3 Cups chopped watermelon

½ Cup finely chopped green pepper 2 Tablespoons fresh lime juice

2 Tablespoons fresh cilantro--finely chopped 1 Tablespoon green onion--finely chopped

1 Tablespoon fresh jalapeno pepper--finely chopped     (canned jalapeno pepper can be substituted)

One clove of fresh garlic--finely chopped       (½  Teaspoon garlic powder may be substituted)

Once all the ingredients have been prepared, combine in a bowl. Let the salsa sit for an hour to allow the flavors to mingle.

Serve with tortilla chips, toasted pita pieces or other sturdy "dippers" such as raw vegetables.

Alternative Ideas:

Serve over grilled fish or on a burger!
