Mediterranean Eggplant Steaks

(Serves 4-8 people depending on whether
it is used as a side dish or main course.)
Ingredients:
• 2 medium eggplant cut into 1” thick slices
• 2-10 ounce boxes frozen spinach
• 2 roasted red peppers – skinned, seeded and chopped
• 2-3 cloves garlic
• 1 – 16 ounce container prepared hummus (home made or pre-made)
• ¼ cup pitted olives of choice – chopped.
• 2 cups bread crumbs (if gluten intolerant, you may substitute gluten free bread • ground into crumbs and lightly toasted)
• ½ cup fresh parsley coarsely chopped
• Olive oil for brushing eggplant slices plus 1 + 2 tablespoons for sauté pan
• Salt and pepper to taste
Preparation Instructions:
1.Preheat oven to 400 degrees.
2.Brush the eggplant slices with olive oil and sprinkle with salt and pepper (both sides).
3.Place on grill pan and cook 3-4 minutes on each side, turning occasionally until just tender. When done, place on baking sheet.
4. While eggplant is grilling, defrost spinach and squeeze excess liquid out.
5. Heat 1 tablespoon olive oil in large skillet and add roasted peppers and garlic. 6. Add the spinach slowly, separating it as you do.
7. Add olives, and then season the spinach mixture with salt and pepper.
8. Top the eggplant steaks with the spinach mixture, dividing evenly among all.
9. Top the spinach mixture with the hummus, lightly spreading to make an even layer.
10. Toss the breadcrumbs and parsley with 2 tablespoons olive oil in the skillet until coated and heated through (you may also season the bread with salt and pepper if you like.)
11. Top the eggplant steaks with the crumb mixture and bake until crumbs toast lightly. These can be made ahead and finished in the oven just before serving.
Variations:
• You may use any combination of vegetables you like either in place of or in addition to the spinach.
• Cheese may be added to the crumb mixture.
• Although this is a vegetarian dish, meat may also be added either with the spinach or in place of the spinach.
• Lastly, you may experiment with seasoning to make it suit any taste.
